PDF Font Stripping. Has anyone done this before?

You cannot do this. The reason it's called a Portable Doent Format is because they can be copied over to any computer and it doesn't matter what fonts are installed on that computer the doent will still display correctly. It does this by embedding a subset of the font inside the PDF itself. Changing the font name inside the PDF won't do anything except mess it up.
