How to avoid Your video skipping when you press the pause botton.?

Ok, that question probably didn't make sense so im gonna clear it up; When i am recording i wanna do that cut thing that Shane Dawson and Destery do in their video's. So i pause and play when im recording, But when i watch it, the video goes too fast for my voice and my mouth is moving and you hear the audio from 3 seconds before. I either need Help with that or i need Editing software that i can make those cool cut things that they use. Thanks!
